A new dinner series by Wild Swan.   Focusing on different Ecosystems around Australia, harnessing the best produce and exploring the diversity of flavours to be found in our natural environment. 


The first of this series will explore the AUSTRALIAN BUSH ecosystem with delicacies including Emu, Kangaroo, and Barramundi to name a few.   


Join Wild Swans Head Chef Tony Power as he takes you on a journey through this amazing ecosystem.
